CARROT ORANGE BARS 
3/4 c. shortening
3/4 c. sugar
1 c. cooked mashed carrots
1 egg
2 c. all-purpose flour
2 tsp. baking powder
3/4 tsp. salt
1 1/2 tsp. grated orange peel
3/4 c. flaked coconut
1/3 c. orange juice (Just Pik'd), thawed

Cream shortening and sugar. Add carrots and egg and mix until well blended.

In a separate bowl, combine flour, baking powder and salt. Gradually add to creamed mixture until well blended.

Spread batter evenly in a 9x13 inch greased pan. Bake at 350 degree oven 20-25 minutes or until toothpick inserted in center comes out clean. Cool completely. Spread with glaze.

GLAZE:

3 tbsp. (Just Pik'd) orange juice
3/4 tsp. grated rind of orange
3/4 c. sifted powdered sugar

Yield: 20-24 bars.
