COCONUT GLAZED CARROT BARS 
1 c. sugar
3/4 c. vegetable oil
2 eggs
1 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 c. shredded fresh carrot
1/2 c. toasted sunflower nuts

BROILED TOPPING:

1/3 c. melted butter
2/3 c. brown sugar, well packed
3 tbsp. undiluted evaporated milk or cream
2/3 c. flaked coconut

In large mixer bowl, cream sugar, oil, and eggs until light. Stir in flour, cinnamon, soda and salt. Fold in carrots and nuts. Pour into a greased and floured 13 x 9 inch pan. Bake at 350 degrees for 25 to 30 minutes or until bars test done with wooden pick.

While bars bake, stir together the butter, brown sugar, milk and coconut. Spread coconut mixture evenly over the hot baked bars.

Place under broiler, about 6 inches from heat. Broil until topping bubbles and begins to brown 2 to 3 minutes. Cool. Cut into bars.
