GINGER COOKIES 
1 c. shortening
1 c. white sugar
2 eggs
2 c. molasses
3/4 c. buttermilk
1 tsp. salt
3 level tbsp. baking soda
1 level tbsp. ginger
Flour, enough to make soft dough (approximately 7 c.)

Mix together in order of occurrence. Chill in refrigerator, before rolling out. Roll thick, cut out with cookie cutters. Bake quickly at 375 degrees on lightly greased cookie sheet. These make great gingerbread men and can be cut out with different cookie cutters for any occasion. Decorate as you like.
