EGGPLANT CASSEROLE 
Peel and cut 1 medium eggplant. Boil until tender, mash and add cracker crumbs (10 crackers), 2 eggs and tablespoons of butter. Butter the casserole and pour in and bake about 35 minutes in 350 degree oven.
