VEGETABLE LASAGNA 
1 sm. cottage cheese
1-2 handfuls Mozzarella cheese
1-2 handfuls Parmesan cheese

Mix together cottage cheese, Mozzarella cheese and Parmesan cheese. Spray casserole dish with Pam vegetable spray. Pour spaghetti sauce to cover bottom of dish. Place uncooked lasagna noodles on top of sauce, noodles, cheese mixture, veggies (zucchini, broccoli flowerettes, red bell peppers, mushrooms, red onion). Sprinkle with shredded cheese. Repeat layers. (Zucchini will make more watery.) Bake covered for 1 hour at 350. Uncover for 15-20 minutes and continue baking. Let sit 5-10 minutes and serve.
