SUMMER CHICKEN SALAD 
2 c. cooked and cubed chicken breasts
1 tbsp. chopped onion
1 tsp. salt
1 c. chopped celery
1 (11 oz.) c. mandarin oranges, juice drained
1 c. Hellmann's mayonnaise
1/3 c. slivered almonds
1 tbsp. lemon juice
1 c. cooked macaroni
1 c. Cool Whip added just before serving

Combine all of the above ingredients except Cool Whip. Mix well. Refrigerate. When ready to serve, add the Cool Whip. Serve from a lettuce-lined bowl or place lettuce leaf on individual salad plates and place a piece of cantaloupe cut in a ring and spoon chicken salad into the center of the melon ring. Sprinkle a few more almonds on the top and serve.
