STEPHANIE'S RAMEN NOODLE
MANDARIN ORANGE CHICKEN SALAD
 
I brought this to an office party and people asked me for the recipe! Plus its cheap and easy! And different - as it is Asian inspired.

3 large boneless skinless chicken breasts
1 cabbage head
1 (11 oz.) can cut mandarin oranges, drained

GLAZE:

1 (3 oz.) pkg. chicken flavored Ramen noodles, divided
1 cup vinegar
1 cup white sugar

Boil chicken breasts until cooked. Cut cabbage into small strips.

In separate pan mix Ramen noodles flavoring packet, vinegar and sugar until it forms a glaze like texture - simmering over low heat (you may need more sugar) but should be more sweet.

Cut chicken up to long thin strips about 1/2-inch. Put in large salad bowl. Put in mandarin oranges - use the entire can but drain first do not put juice. Cut up cabbage.

Pour glaze over the chicken, oranges and cabbage stirring until covered entirely (its best to have extra glaze on bottom of pan to pour over chicken while serving as well - or if you intend to store - so it doesn't dry out).

Sprinkle crumbled uncooked Ramen noodles over salad and serve (if it sits the noodles will eventually soak in mixture and turn soft) but I like them crunchy.

I'm sorry but I do not understand if the cabbage is cooked or raw. Can someone clarify this for me? It sounds like a tasty salad to me so I think the cabbage is likely raw. This salad would be nice to take to a carry in affair.
