SWEET POTATO SOUFFLE 
SOUFFLE:

3 c. cooked sweet potatoes (fresh or canned)
1 c. sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1/2 c. sweet milk
1 tbsp. orange or vanilla flavoring

TOPPING:

1 c. brown sugar
1/3 c. flour
1 c. chopped nuts
1/2 stick butter

In mixer on medium speed, mix together souffle ingredients. Pour into 1 1/2-quart Pyrex baking dish. Mix topping ingredients (sugar, flour, chopped nuts) in a small bowl; sprinkle over souffle. Pour melted butter over all. Bake at 350 degrees for 35 minutes.
