SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1/2 tsp. salt
1 tsp. vanilla
2 eggs
1/2 stick butter
2 c. Eagle Brand condensed milk

Topping:

1 c. brown sugar
1 c. chopped nuts
1/2 c. flour
1/2 stick butter

Mix sweet potatoes, salt, butter, vanilla, sugar, eggs and condensed milk. Beat until smooth.

Topping: Soften butter and mix in all other ingredients until it forms a dry topping.

Sprinkle over sweet potato mixture and bake about 35 minutes at 350°F.
