REUBEN MEAT LOAF
1 beaten egg
1/4 c. Thousand Island dressing
1 c. soft rye bread crumbs
1/2 c. chopped onion
1/4 c. sweet pickle relish
1 tbsp. Worcestershire sauce
1 1/2 lbs. hamburger or ground pork
1 (8 oz.) can sauerkraut, drained and finely snipped
1 c. shredded Swiss cheese

In a large mixing bowl, combine egg and salad dressing. Stir in bread crumbs, onion, relish, Worcestershire sauce, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add ground meat and mix well.

On a sheet of waxed paper, pat meat mixture in a 8-12 inch rectangle. Top with sauerkraut and 3/4 cup of the cheese. Using the waxed paper to lift rectangle, roll up meat from short side. Pinch edges together to seal. Place roll, seam side down in a 9x13 baking dish. Bake for 50 minutes at 350 degrees. Sprinkle remaining cheese on top. Bake a couple minutes more or until cheese is melted. Serves 8.
