REUBEN LOAF (FOR MICROWAVE) 
2 eggs, beaten
1 c. dark rye soft bread crumbs
1 tbsp. minced fresh parsley
1 sm. clove garlic, minced
12 oz. lean, cooked corn beef, chopped fine
1 c. canned sauerkraut
3/4 c. grated Swiss cheese
2 slices Swiss cheese, cut in half

Combine eggs, bread crumbs, parsley and minced garlic. Gold in corned beef. Put half meat mixture into 4"x8" glass baking dish. Combine sauerkraut and Swiss cheese. Place on top of meat mixture. Microwave on full power 4 minutes. Top cooked loaf with Swiss cheese. Microwave full power 50 seconds to melt cheese. Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
