STUFFED MUSHROOMS 
2 lbs. fresh mushrooms
1 pkg. cornbread stuffing mix
1 sm. onion, finely chopped
1/4 c. red pepper, fresh, finely chopped
1/4 c. celery, finely chopped
1/4 c. Parmesan cheese

Prepare stuffing mix according to directions. Saute onion, pepper and celery in small amount of butter. While the above is cooking, clean mushrooms and remove stems.

Combine vegetables and stuffing, mix thoroughly. Fill cavity of mushrooms with mixture. Sprinkle cheese over top. Bake for 20-25 minutes at 350 degrees until mushrooms are soft.
