DATE NUT PUDDING 
2 3/4 tbsp. minute tapioca
1/2 c. brown sugar
1/4 tsp. salt
2 c. boiling water
1/2 c. nuts, chopped
1/2 c. raisins
1/2 c. dates, chopped
1 tsp. vanilla

In heavy pan mix tapioca, sugar, and salt. Add boiling water. Cook over medium heat until clear, stirring. Add rest of ingredients. Cook 5 minutes. Add vanilla. Cool slightly. Pour into dessert glasses. Serve cold with half and half. Serves 4-6.
