HUSH PUPPIES 
1 1/2 c. yellow cornmeal
1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 egg
1 sm. onion, chopped
1 c. buttermilk
1 jalapeno pepper, chopped

1. In a large bowl, stir cornmeal, flour, baking powder, salt and baking soda.

2. In separate bowl; mix together egg, onion and buttermilk. Stir into dry ingredients until blended. Add jalapeno pepper if desired.

3. Drop by rounded tablespoonfuls into hot deep fat, 370 degrees. Fry about 1 minute each side or until golden, turning to brown on both sides.

Good served with fried fish fillets, chicken or any baked or bar-b-qued meat.
