BASIC SEAFOOD CHOWDER 
8 oz. fresh or frozen fish fillets, canned clams or oysters may be substituted
2 tbsp. chopped onion
1 tsp. melted fat or oil
1/2 c. diced potatoes
1/2 c. boiling water
1/4 tsp. salt
Dash of pepper
2/3 c. milk
1 tbsp. water
2 tsp. flour
Paprika

Thaw frozen fillets. Skin fillets and cut into 1 inch pieces. Cook onion in fat until tender. Add potatoes, water, salt, pepper, and fish. Cover and simmer about 15 minutes (until potatoes are tender). Add milk; heat. Stir water and flour together until smooth. Add to milk mixture and cook until thick and smooth, stirring constantly. Sprinkle with paprika. Serves 2.

Hi Joan,

If you're planning to freeze it, leave out the milk until serving time (or use heavy cream instead, which can be frozen).
