BASIC SEAFOOD CHOWDER | |
8 oz. fresh or frozen fish fillets, canned clams or oysters may be substituted 2 tbsp. chopped onion 1 tsp. melted fat or oil 1/2 c. diced potatoes 1/2 c. boiling water 1/4 tsp. salt Dash of pepper 2/3 c. milk 1 tbsp. water 2 tsp. flour Paprika Thaw frozen fillets. Skin fillets and cut into 1 inch pieces. Cook onion in fat until tender. Add potatoes, water, salt, pepper, and fish. Cover and simmer about 15 minutes (until potatoes are tender). Add milk; heat. Stir water and flour together until smooth. Add to milk mixture and cook until thick and smooth, stirring constantly. Sprinkle with paprika. Serves 2. |
