AUNT MILDRED'S CHICKEN 
1 whole chicken, cut up and skinned
1 c. celery, cut to bite size pieces
1 c. carrots, sliced
1 tbsp. parsley
1/4 tsp. garlic, chopped fine (optional)
2 c. tomato sauce
1 c. water
Oil

Brown chicken in oil, when browned, take out and put in roaster or large pan. Brown onions, celery, carrots, and garlic; brown just until onions are transparent. Add to chicken. Add parsley, 2 cups tomato sauce, and 1 cup water; mix together. Can be baked in oven or cook on top of stove. Simmer until chicken is done, about 1 hour.

Note: Can be served over rice or mashed potatoes. Make dumplings and drop on top of chicken last 20 minutes or can be served over rice or mashed potatoes.
