AUNT JO'S SWEET HAM CUBES 
1 lb. ham steak, 3/4 inch thick
1/4 c. brown sugar
1 c. pineapple chunks (I use crushed)
1/4 c. juice from pineapple can
1 tsp. cornstarch or enough flour to make a slightly thickened sauce

Heat sugar, cornstarch or flour, and pineapple juice until slightly thickened. Cut ham into 3/4 inch cubes. Add to sauce mixture. Stir frequently. Add pineapple, stirring often. Cook white rice (your usual amount) and add few spoonfuls at a time to ham and pineapple mixture. Don't put too much rice so that the mixture is too dry.

(This serves the 3 of us nicely - if we are especially hungry or have additional people, I just double the recipe.)
