BANANA BREAD 
1 3/4 c. sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs, well beaten
2-3 ripe bananas, mashed

Sift together dry ingredients. Cream shortening in mixing bowl. Add sugar gradually. Beat until light and fluffy. Add eggs and beat well. Add flour mixture alternately with bananas, a small amount at a time, beating each addition until smooth.

Turn into a well-greased bread pan and bake at 350 degrees for 70 minutes or until done.

3/4 cup of nuts may be added to mixture if you desire.
