MADDIE'S SUMMER SALAD WITH OIL AND VINEGAR DRESSING | |
SALAD: about 4 or 5 romaine lettuce leaves 1 1/2 cups field greens (spring mix) 10 baby carrots 1/2 cup slaw mix (broccoli slaw) 1/4 tsp. parsley flakes 1/4 tsp. chopped basil leaves 1/2 tsp. dry rosemary leaves DRESSING: pinch of salt pinch of pepper 3 tbsp. olive oil 2 tbsp. pure malt vinegar What I do is I cut my romaine into bite size pieces, rinse and dry along with the field greens, baby carrots, and slaw mix. Then, I put the clean veggies in a salad bowl (I like to use a white bowl to show all the color, but you can use whatever color you want). Add the parsley flakes and basil leaves. I like to crush the rosemary leaves slightly between the palm of my hand and my thumb, then add those to the salad. Add salt, pepper, olive oil, and vinegar. Finally, toss well. Enjoy!
