HAWAIIAN FRUITCAKE 
2 c. sugar
3 eggs
3/4 c. oil
2 tsp. vanilla
2 c. shredded carrots
1 c. coconut
2 c. flour
1 tsp. baking soda
1 c. nuts
1 (15 1/2 oz.) can crushed pineapple with juice

FROSTING:

8 oz. cream cheese
1 stick butter
2 1/2 c. powdered sugar
1 tsp. vanilla

Grease 9 x 13 inch pan. Combine all ingredients and bake at 350 degrees for 50-55 minutes or until done.

When cake is cooled combine softened cream cheese and butter with powdered sugar and vanilla. Nuts may be added to frosting if desired.
