ROASTED QUARTERED POTATOES WITH GARLIC | |
3 lb. sm. boiling potatoes, quartered 3 tbsp. olive oil 1/2 tsp. salt 1/2 tsp. pepper 3 lg. garlic cloves, sliced thin 1/4 c. minced fresh parsley leaves In a large roasting pan toss together well the potatoes, the oil, the salt, the pepper and the garlic and roast the potatoes in a preheated 350 degree oven, tossing them occasionally. For 1 hour or until they are tender and golden. Add the parsley and toss mixture well. |
