ROASTED QUARTERED POTATOES WITH
GARLIC
 
3 lbs. sm. boiling potatoes, quartered
3 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. freshly ground pepper
3 lg. garlic cloves, minced
1/4 c. fresh minced parsley

In a large roasting pan toss together well the potatoes, the oil, the salt, the pepper and the garlic and roast the potatoes in a preheated 350 degree oven, tossing them occasionally, for 1 hour or until they are tender and golden. Add the parsley and toss the mixture well. Serves 8 to 10.
