CORN PUDDING 
2 c. corn, cut from cob
2 eggs, slightly beaten
3/4 c. milk
2 tbsp. sugar
2 tbsp. onion, diced
2 tbsp. butter, melted
1 tsp. salt
1/8 tsp. pepper

Combine all ingredients, mix well. Pour into lightly greased 1-quart baking dish. Bake uncovered at 350 degrees for 30 minutes or until firm. Yield: 4 to 6 servings.
