CHICKEN SALTIMBOCCA 
3 whole chicken breasts, skinned, boned and halved
3 slices ham, halved
3 slices Mozzarella cheese, halved
1 tomato, seeded and chopped
1/2 tsp. dried sage
1/3 c. dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. snipped parsley
1/4 c. melted butter

Pound chicken breasts to 1/4 inch thickness. Place 1 slice of ham and 1 slice of Mozzarella cheese on each piece. Spoon about 2 tablespoons tomato in center; sprinkle with sage. Tuck in sides, roll up and secure with picks.

Combine bread crumbs, Parmesan cheese and parsley. Dip chicken rolls in melted butter, then in crumb mixture. Arrange in baking dish. Microwave at HIGH for 16 minutes. (For conventional oven, cook at 350 degrees for 40-45 minutes.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
