CHICKEN SALTIMBOCCA 
3 whole chicken breasts, skinned, boned & halved lengthwise
6 slices (thin) boiled ham
6 slices Swiss cheese
1 med. tomato, sliced very thin
Dried sage, crushed
1/3 c. fine dry bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. parsley
1/4 c. butter, melted

Place chicken boned side up between 2 pieces of saran wrap. Working out from center pound each lightly with meat mallet to approximately 5 x 5 inches. Remove saran wrap. Place a ham slice, cheese slice and a tomato slice on each piece.

Sprinkle lightly with sage, fold in sides and roll up jelly roll fashion. Press to seal well. Combine crumbs, Parmesan and parsley. Dip chicken in butter and roll in crumbs. Bake in shallow pan at 350 degrees for 40-45 minutes. Remove to platter and serve with chicken gravy or white sauce. Serves 6.
