STUFFED CHICKEN BREAST
SALTIMBOCCA
 
4 chicken breasts, split, boned and pounded
8 slices Prosciutto or baked ham
4 slices Mozzarella
2 tomatoes, chopped and drained
1 tsp. sage
1/2 c. dried bread crumbs
3 tbsp. Parmesan cheese
3 tbsp. chopped parsley
4 tbsp. butter, melted
Parsley sprigs

Place chicken breasts skin side down. Top each with slice of ham followed by a half slice of Mozzarella. Sprinkle with tomato and sage. Roll up each breast and secure with toothpick. Combine bread crumbs, cheese and parsley. Dip each breast in butter. Dip in bread crumb mixture.

Arrange seam side down in single layer, oven-proof baking dish. Bake in preheated 350 degree oven for 40 to 45 minutes. Garnish with parsley and serve immediately.

Very easy to make and so delicious even my picky boyfriend liked it! I only baked it for 30 minutes and it turned out great. Yum!!

Prepared this for dinner tonight. This recipe is a sure keeper. My family loved it and requested it become a weekly menu item! I didn't have parsley but it turned out great without it.
