MAPLE MASHED SWEET POTATOES 
4 sweet potatoes or yams (about 2 lbs.)
1/4 c. maple syrup
1/4 c. orange juice
1/4 c. low fat plain yogurt

Scrub potatoes; pierce each several times. Place about an inch apart on a paper towel in the microwave. Cook on High for about 8 minutes, turning potatoes once. Pierce with a fork to check for doneness. Let stand for 3 minutes.

Remove and discard skin. Place potatoes in a medium glass bowl. Add syrup, orange juice and yogurt. Mash.

Microwave on High for 1 minute. Stir and microwave for 30 seconds. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
