DIRTY AND LAZY MASHED POTATOES
Serving Size: 2
1 Russet potato
1 red (Sweet) potato
1 tablespoon butter
1 tablespoon salt

Dirty and lazy mashed potatoes are meant to be served with a chunky consistency and with the peels still on the potatoes and in the final dish. Anyone who prefers a creamier mashed potatoes can use their fork to "finish" smashing the potatoes on their plate. Anyone who prefers not to have peels in their mashed potatoes will have to dig the peels out for themselves.

Wash and scrub the potatoes but do NOT peel. Cut up the Russet potato into 1-inch cubes and the red potato into 1/2 inch cubes. (The smaller size of the red potato cubes will fit through most potato mashers, you should end up a variety of textures within the completed dish.)

Add the potatoes and salt into a pot and boil until the potatoes can be easily broken apart by a fork. Drain or strain the potatoes, add the butter, and lightly smash with a potato smasher or a fork.

Serve.
