GRANDMA VERTUCA'S OLD KENTUCKY
PECAN CAKE
 
1 lb. butter (2 c.)
1 lb. sugar, granulated (2 c.)
1 lb. flour (4 c.)
10 eggs
1 pt. whiskey or brandy
2 lbs. pecans
1 lb. raisins (optional, if not liked)
1/2 lb. candied cherries
1/2 lb. candied pineapple
1 tsp. nutmeg
3 tsp. baking powder

Mix flour, baking powder and spice. Mix sugar, butter, eggs and beat until fluffy. Add whiskey (don't drink). Save a little flour mixture to put with fruit and nuts. Now combine everything. If raisins omitted, add more cherries and nuts.

Bake in a large tube pan 4 hours in slow 300 degree oven.
