HOLIDAY SWEET POTATOES | |
3 lbs. of yams-sweet potatoes 1/4 tsp. pepper 1 tsp. salt 1/4 c. butter 3/4 c. milk 16 lg. marshmallows 1. Cook potatoes in boiling water, covered for 25-30 minutes until fork tender. 2. Peel and mash with a fork in a 2 1/2 quart casserole. Add pepper and salt. 3. Heat butter in small saucepan. Add milk and heat until a ring of bubbles form around the rim. 4. Slowly pour milk mixture into potatoes while beating at low speed. Beat at high speed until smooth. 5. Push marshmallows into mixture 1/2 inch down. Bake covered at 350 degrees for 35-40 minutes. |
