CHRISTINE'S LOW CALORIE HOLIDAY

ORANGE - GLAZED CORNISH GAME HENS:

2 Cornish game hens, halved (cook whole for moister hens)
1/2 c. orange marmalade (no sugar, L and A or Sorrelli Ridge brands)
1/2 c. white wine
2 tsp. Dijon mustard
1/4 tsp. white pepper
Orange slice

Clean hens, removing wingtips, skin and any visible fat. Place in a nonstick baking pan. Preheat oven to 400 degrees. Mix remaining ingredients together and pour liquid over hens. Bake for 25 to 30 minutes. Garnish with a twisted orange slice.

Serves 4.

SWEET POTATO PIE:

FILLING:

1 1/2 c. hoop cheese (may substitute Farmers cheese)
16 oz. sweet potato (one large potato)
4 egg whites
1/2 c. unsweetened apple juice concentrate
1/2 tsp. cardamon
1/2 tsp. ginger
1/2 tsp. allspice
1/4 tsp. nutmeg
1/2 tsp. cinnamon

Blend hoop cheese in food processor. Cheese will form a ball, continue processing until smooth. Remove sweet potato skin. Slice potato and add to blender. Add all other ingredients and continue blending until completely smooth. Pour over Grape Nuts crust (see below). Place in oven preheated to 425 degrees for 8 minutes. Reduce oven temperature to 325 degrees and bake for another 45 minutes.

GRAPE NUTS PIE CRUST:

Coat a 9 inch pie pan with 2 tablespoons apple juice concentrate. Sprinkle 3/4 to 1 cup of Grape Nuts cereal into the pan until distributed evenly.
