CHOCOLATE ZUCCHINI CAKE 
1 stick + 1 tbsp. butter, softened
2 c. sugar
3 eggs
3 (1 oz.) squares unsweetened chocolate, melted
2 tsp. vanilla
2 tsp. grated orange rind
1/2 c. milk
2 c. grated zucchini
2 1/2 c. unbleached white flour
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

In a large bowl cream together butter and sugar. Beat in the eggs, then the chocolate, vanilla, orange rind and milk. Stir in the zucchini.

In another bowl stir together the remaining ingredients. Beat these into zucchini mixture. Turn batter into a greased and floured tube pan. Bake in a 350 degree oven for about 1 hour or until a toothpick comes out clean. Cool on a rack before removing from the pan. Makes 1 large tube cake, 12 to 16 servings.
