FRESH APPLE CAKE 
3 large apples, chopped
2 c. sugar
3 eggs
1 1/2 c. oil
3 c. plain flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla

Peel apples and chop; set aside. Mix sugar and eggs until creamy. Sift together the flour, soda, salt and baking powder. Mix dry ingredients, oil and vanilla into egg mixture. Add apples.

Bake in greased and floured tube pan for 1 hour and 15 minutes at 350°F.

Caramel Frosting:

2 1/2 c. sugar
3/4 c. milk
1 stick butter

Cook 1/2 cup sugar in iron skillet until brown. Melt 2 cups sugar in milk. Add caramelized sugar. Cook to soft-ball stage.
