FRESH APPLE CAKE II 
1 c. Wesson or Crisco oil
2 c. sugar
3 eggs, beaten
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
3 c. tart apples, chopped
1 c. nuts, chopped

Mix oil and sugar. Add eggs and vanilla. Add dry ingredients and mix well. Stir in apples and nuts. Dough will be stiff. Pour into a greased and floured tube pan.

Bake at 350°F for 1 to 1 1/2 hours.
