FRESH APPLE CAKE 
3 c. plain flour
2 c. sugar
1 1/2 c. oil (I use Wesson)
2 eggs
2 tsp. cinnamon
1 tsp. salt
1 tsp. double acting baking powder
1 tsp. vanilla extract
4 c. diced apples (Golden Delicious)
1 c. chopped nuts (walnut or pecans)

Preheat oven at 375°F.

In large bowl, stir in the first 8 ingredients; mix well using a large spoon. Stir in apples and walnuts until just blended. Spread batter evenly in a 13 x 9-inch cake pan (ungreased).

Bake 55 minutes or until toothpick comes out clean. Cool cake and cut in squares.

Makes 12 servings.
