FRESH APPLE CAKE 
1 c. vegetable oil
1 tsp. vanilla
2 eggs
2 c. sugar
2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 cups peeled, diced apples
1 c. chopped nuts

Beat together oil, vanilla, eggs and sugar. Sift together flour, salt, soda and cinnamon. Mix wet and dry ingredients; add apples and nuts. Batter will be very thick. Pour into 10 x 13 greased pan.

Bake in 325°F oven for 1 hour. This cake needs no icing.
