FRESH APPLE CAKE 
1 1/4 c. oil
2 c. sugar
1 tsp. baking soda
1 tsp. vanilla
1 c. pecans, chopped
3 c. raw, peeled, thinly sliced baking apples
2 1/2 c. cake flour (or plain flour)
3 eggs
1 tsp. salt
2 tsp. baking powder

Beat oil and sugar, add eggs (one at a time, beating well after each addition). Mix dry ingredients and slowly beat into mixture. Fold in pecans and apples. Pour into greased-floured pan. Bake 55 to 60 minutes at 350 degrees (Bundt pan or long sheet cake pan).

GLAZE (Brown Sugar) :
1/2 c. brown sugar
1/4 stick butter
1/4 c. sweet milk

Mix, bring to a boil, pour over cake.
