FRESH APPLE POUND CAKE 
2 c. sugar
1 1/2 c. vegetable oil
3 lg. eggs
3 c. flour
1 1/2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
3 c. diced firm apples (Golden Delicious work well)
3/4 c. flaked coconut
1 c. black walnut pieces

Mix sugar and oil. Add eggs; beat well. Combine flour, salt and soda. Add to oil mixture. Stir in vanilla, apples, coconut and walnuts. Spoon into 9" oiled (pound) cake pan. Bake at 325 degrees for 80 to 90 minutes. Cool and serve.
