RED VELVET CAKE 
1 1/2 c. shortening
1 1/2 c. sugar
2 oz. red food coloring
1 tsp. salt
1 tbsp. vinegar
1 tsp. vanilla
2 eggs
2 tbsp. cocoa
2 1/4 c. cake flour
1 c. buttermilk
1 tsp. baking soda

Cream shortening, eggs and sugar. Make a paste of cocoa and part of food coloring. Add paste and more food coloring to mixture. Sift flour and salt, add flour alternately with buttermilk. Add vinegar, stir soda with vanilla and add to batter. Bake for 30 minutes at 350 degrees in two 8 inch cake pans.

FROSTING:

2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
1 c. butter
1 c. sugar

Cook cornstarch in water until thick, cool, cream until fluffy in bowl the butter and sugar, add vanilla. Add this to cornstarch mixture and beat like whipped cream.
