RED VELVET CAKE 
1 1/2 c. sugar
1/2 c. Crisco
2 eggs
2 oz. red food coloring
2 tbsp. cocoa
2 tbsp. vanilla
1 c. buttermilk
2 1/2 c. plain flour
3/4 tsp. salt
1 tsp. baking soda
1 tbsp. vinegar

Cream Crisco and sugar. Add eggs, food coloring, buttermilk and set aside. Sift flour, salt and soda together. Alternate flour and buttermilk, setting with flour. Mix well. Fold in vinegar, do not mix with mixer. Bake for 25 minutes at 325 degrees.

FROSTING:

1 box powdered sugar
1 tsp. vanilla
1 stick butter
8 oz. softened cream cheese
1 c. chopped pecans

Mix and frost cake.
