SPINACH SOUP | |
4 dried black mushrooms 1/2 lb. spinach 1/2 c. bamboo shoots 6 c. stock 1 tsp. salt Few drops sesame oil Soak dried mushrooms. Slice bamboo shoots and soaked mushrooms, discarding stems of mushrooms. Cut spinach leaves into 1 inch pieces. Boil stock. Add mushrooms and bamboo shoots and cover. Simmer for 10 minutes. Add spinach and simmer uncovered for 2 more minutes. Season with salt and sesame oil. |
