CORNBREAD SKILLET 
2 eggs, beaten
2 tsp. baking soda
1 c. milk
1 c. yellow cornmeal
1 tsp. salt
1/4 c. oil
1 can creamed corn

Combine and set aside. 1 lg. onion, chopped 2 c. shredded cheddar 2-4 jalapenos, chopped

Pour half of cornbread mixture into greased 10 1/2" iron skillet. Sprinkle evenly with beef. Top with cheese, onion, jalapenos. Pour remaining cornbread mixture on top. Bake at 350 degrees for 45 minutes or until browned. Let stand 5 minutes before serving.
