HAM AND SCALLOP POTATO 
4 tbsp. butter
1 tbsp. chopped onion
4 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
3 c. milk
7 c. sliced, pared potatoes
2 c. cooked ham squared
1 c. grated Cheddar cheese

Melt butter in small saucepan, saute onion until soft, stir in flour, salt and pepper. Stir in milk slowly. Cook over low heat, stirring constantly, until thickened. Layer half potatoes, half the ham, and half the cheese in greased baking dish. Pour over this half the sauce. Add remaining potatoes, ham, sauce and cheese. Bake at 350 degrees for 1 1/4 hours.

Makes 8 servings.
