HAM AND SCALLOPED POTATOES 
1 raw med. potato
1 tsp. grated onion
1/2 c. hot 2% milk
2 oz. thinly sliced ham
Salt and pepper, as desired

Using a small piece of fat from the ham, grease and individual baking dish. Slice the potato and place one half of it in the bottom of the dish. Sprinkle with half of the onion and seasoning, which should be used sparingly. Add the ham and cover with the remaining half of potato and onions. Add the hot milk.

If there is too much milk for the dish, hold and add gradually during the cooking process. Cover the dish and bake in a moderate oven (350 degrees) until the potatoes are cooked through and become brown on top, approximately 20 minutes.
