GOOSEBERRY CAKE RECIPE 
2 c. flour
1 1/2 c. sugar
1/2 c. shortening
1/2 c. milk
1 tsp. baking soda
2 eggs
1 tsp. vanilla
1 1/2 c. gooseberries

Mix as you would any cake. Bake in a sheet cake pan at 350°F for about 30 minutes.

ICING 1:

Boil 1/2 cup sugar and 1/4 cup water for 2 minutes, punch holes in cake with a fork, and pour on icing.

ICING 2:

Combine 1 stick butter, 3/4 cup sugar, and 6-ounce can of Pet (evaporated) milk. Boil 2 minutes, remove from heat, add one can flaked coconut and 1/2 teaspoon vanilla. Pour over cake while hot.

NOTE: This is surprisingly good cake, very moist.
