CHERRY CREAM CHEESE BALLS 
These are great for Christmas! They also freeze well!

2 (8 oz. ea.) pkgs. Philadelphia cream cheese
1 tbsp. butter
1/2 cup sugar
1 tbsp. lemon juice
1/2 tsp. vanilla
1/2 cup sweetened coconut flakes
15 to 20 maraschino cherries, quartered
1 1/2 cups graham cracker crumbs

OPTIONAL (FOR VARIETY):

1 cup Oreo cookie crumbs
1 cup sweetened coconut flakes

Beat cream cheese and butter until smooth, about 3 minutes. Add sugar, lemon juice and vanilla and beat another 2 minutes. With a spoon stir in coconut, and lastly, cherries. Chill at least 1/2 hour.

Prepare a plate with graham cracker crumbs. With a teaspoon scoop a small amount of batter and place in crumbs (It is less messy if you cover your spoonful of batter with the crumbs before rolling). Roll, meatball style. Coat small balls with additional graham cracker crumbs, so they are not sticky. Refrigerate minimum 3 hours so that balls are firm.

Variations: Replace the graham cracker crumbs with Oreo cookie crumbs. Another option is to replace the graham cracker crumbs and roll them in coconut flakes. All three options look nice on a plate together and provide more variety!
