SMOKED SAUSAGE ALA DAD 
1 lb. sweet Italian sausage
1/2 lb. green or sweet frying pepper
1 lg. Vidalia or other sweet onion
1/2 lb. fresh mushrooms
1 lb. fresh linguini
Parmesan cheese
1/4 c. olive oil

Smoke sausage on a grill of 2 or more hours with hardwood smoke. Cut into 1/2 - 3/4 inch slices.

Slice (thick) onions, peppers and mushrooms. Saute in olive oil to taste. Add sausage to reheat. Serve over linguini.

May be varied by using different vegetables. Dried tomatoes make an interesting addition. Serves 4.
