ZUCCHINI BREAD 
2 c. zucchini, shredded
3 eggs
1 c. oil
3 tsp. vanilla
2 c. sugar
1 1/4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 tsp. baking soda
3 c. flour
1/2 c. nuts, chopped
1/2 c. raisins
1 c. crushed pineapple, drained

Combine all ingredients and mix well. Pour into small greased and floured loaf pans.

Bake at 350°F for 40 minutes.
