RUTH'S ZUCCHINI BREAD 
4 eggs
1 c. olive oil
2 c. sugar
3 tsp. vanilla
3 c. shredded zucchini
1/2 can crushed pineapple, drained
3 c. flour
3 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger

Mix all above in mixing bowl. Bake at 350 degrees in 2 bread pans.
