SWEET ZUCCHINI SPICE BREAD 
2 c. coarsely grated zucchini
1/2 c. honey
6 tbsp. melted butter
2 lg. eggs
1/2 tsp. vanilla extract
1 c. unbleached white flour
1 c. whole wheat flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1/4 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. cinnamon
1/4 tsp. ginger

35-45 minutes, 350 degrees. Butter a medium loaf pan.

Grate, drain and squeeze zucchini dry. Beat honey 5 minutes. Add butter, eggs, vanilla and beat 2 minutes more. Sift together the dry ingredients. Alternate adding the dry and zucchini to honey mix ending with dry. Add optional 1/2 cup chopped nuts or currants. Bake.
